I believe that you can really sense someone up-close and personal, but I can understand being on the side of caution about meeting in person.

Strong coffee and conversation. Art gallery, Korean BBQ. Pub food: sharing a big plate of nachos/chicken wings with cold beer.
Perhaps taking a walk for conversation and then a big hug before saying goodnight.
